alpharaposa | family gatherings are going to get strange..

I've been trying to come up with an alternative to the standard, high sodium tomato sauce for pasta for a while. This is both due to needing to eat lower sodium and the fact that currently tomatoes and my stomach aren't getting along well right now.

We finally found a great one.. a white sauce with pepper jack cheese. About as low sodium for a cheese sauce as you can get without resorting to the odd texture of "low sodium" cheeses.

Sadly, it occurred to me that this success can't be shared with my dad. Since he's had his gallbladder out, he can't eat as much fat or dairy. He could easily handle a good tomato sauce, but I can't. *facepalm*

Too many diet restrictions. We'll figure something out eventually, but it does make life more complicated for family visits.
