I've been trying to come up with an alternative to the standard, high sodium tomato sauce for pasta for a while. This is both due to needing to eat lower sodium and the fact that currently tomatoes and my stomach aren't getting along well right now.

We finally found a great one.. a white sauce with pepper jack cheese. About as low sodium for a cheese sauce as you can get without resorting to the odd texture of "low sodium" cheeses.

Sadly, it occurred to me that this success can't be shared with my dad. Since he's had his gallbladder out, he can't eat as much fat or dairy. He could easily handle a good tomato sauce, but I can't. *facepalm*

Too many diet restrictions. We'll figure something out eventually, but it does make life more complicated for family visits.

Is there a low sodium tomato sauce? If it tastes odd, you could add salt substitute. Or, make your own tomato sauce.

If I were to start with only fresh tomatoes- nothing canned- I could probably get a sauce with lower sodium as a lower sodium cheese sauce. Tomatoes have a fair amount of natural sodium in them (rare for a fruit or veggie).

The problem there is the acid in the tomatoes. Right now, tomatoes upset my stomach too much and give me horrible reflux. Maybe after the baby is born and big enough that I can devote the time to cooking down the tomatoes needed.

Depends on who you ask.
It's either a tomato sauce blended with cream or it's a cream sauce blended with tomato paste.

Maybe make the pasta separate from the sauce, put the sauce on the side, people load on the one they want?

You could have two sauces, and people can put whichever they want on their own pasta (one or the other or have two small piles of pasta and one sauce on each.

I ate pizza for lunch today and lasagne for supper tonight. I feel bloated and you don't want to stand downwind of me, but that's life. I can eat what I want, provided I don't overdo.

To make it more complicated, I am avoiding cholesterol and eating mostly vegetables. I could have plain pasta with maybe a sprinkling of cheese on top, but not the heavy cheese sauce you describe. However, I am looking forward to some turkey on Thanksgiving. I just have to watch how much and avoid any desserts entirely.
