I've been making more and more dishes without using a recipe, lately. Yesterday, there were pork chops with cider and sauerkraut. Today, I cooked kidney beans from scratch and made chili that the hubby approves of. Last week, I made a carrot and bell pepper soup.

I've discovered that a veggie soup is a good way for me to get more veggies in my diet. Salads wilt too quickly to be really helpful for my daily lunches. Unfortunately, the hubby isn't interested in soup without meat, so if I whip some up, he scrounges or skips lunch during the day unless there are alternatives.

Oh, and when I did the pork chops and sauerkraut, the cub helped himself to my sauerkraut. I'm impressed with his love of veggies, but I have no idea where it came from.
