So, we made lasagna today, using the old family recipe from my mom, except I tried using ricotta cheese instead of cottage cheese.

It was good, but not quite as good. Still lasagna, the king of casseroles, but it was missing just that extra bit of stick-to-your-ribs heartiness. Next time, back to the cottage cheese.

The best cottage cheese, if you can find it, is the old fashioned type. If you cannot find it, 1% milkfat is okay. Also for some zip, the hot style sausage works great. When did I give you the lasagna recipe? It is not really an old family recipe, but you probably could not find the exact recipe in the latest version of the Better Homes and Gardens cookbook. The latest version that we have is more geared toward healthier dishes.

I've always preferred ricotta, myself.

Personally, I think a super-thick sauce makes the difference. I make my own with tomato paste, which makes it very, very thick.

...This certainly explains why I always thought the stuff in lasagna resembled cottage cheese. o.o

I might post the recipe, then. :) Mom's lasagna originally came out of the old Better Homes and Gardens cookbook, from back before it got all trendy and "healthy". It's always been a show-stopper at church and family dinners.

I think ricotta makes it too dry. I prefer cottage cheese.
