The question of the guide dogs is easier than the alcohol. Guide dogs are necessary for some people to get around. There's very little issue of coming in contact with them unless you get into some kind of bizarre wreck. Avoiding having them even in your cab is kind of like somebody who was so afraid of peanuts that they stop eating in restaurants.
The comment that the drivers' refusal to serve those who had alcohol is like those Christians who refuse to fill prescriptions for abortifacients and birth control pills is relevant, but the comparison isn't quite accurate. If the taxi drivers were, say, convenience store owners that refused to sell alcohol, that would be a more accurate parallel.
