While visiting my folks over my brief vacation, I obtained
collinsmom's basic egg salad recipe, with notes for additions to make it into ham salad, or chicken, or tuna, or potato. Really versatile.
But when I was out shopping, I forgot to pick up ham or chicken in order to make a version for
anher! For some reason, even when the taste of tuna is disguised, it ends up disagreeing with his stomach, so anything tuna is mine.
But I did buy bacon.
So, I fried up a pound of bacon and tore up the crispiest pieces into chewy bacon bits. I boiled eggs using this method, which works astonishingly well.
Then I made egg salad and put lots of bacon in it. Two great tastes together!
If you ask nicely, I might reveal my mom's super secret basic egg salad recipe.
Oh, heck. I don't think she'll mind.
Basic Egg Salad Recipe
4 boiled eggs, chopped (I have an egg slicer for this)
10 oz jar of relish, sweet or dill (I used dill)
1/4 of medium-sized onion, chopped
Real mayonnaise to coat, about 1-2 large spoonfuls (or about 3-4 tablespoons worth)
I added about 2/3 of a lb (that's pre-cooked size) of cooked and shredded bacon, but you could add any of the following:
1 pkg drained tuna
1 cup cooked, chopped chicken
3-4 medium potatoes, cooked and chopped
1-2 cups cooked and chopped ham
