Adventures in cooking: pineapple cake

(It's vegan for Lent. Apparently Orthodox encourages even stricter dietary guidelines than I thought.)
I tried it, doing a flour+baking powder+salt substitute for the self-rising flour. It ain't bad.

This isn't nearly as moist as applesauce cake. When it's done, you can cut it up and eat it with your fingers if you're feeling lazy. I suspect a sprinkling of powdered sugar on top would complement it well.
