Adventures in cooking: Beef stew!

How is today's beef stew unlike the last one? Well, I snagged a recipe for Guinness Beef Stew, that's how.
So. Chop up beef into cubes, dust with flour and brown lightly in bottom of pot. Remove beef. Chop up onion and carmelize in bottom of pot (with a little bit of butter). Toss beef back in and pour in one bottle of Guinness. Add thyme, oregano, basil, a bay leaf (or two), salt, pepper, and garlic. Chop up a generous portion of carrots and potatoes. Add water to bring the liquid up just high enough to cover everything. Cook until potatoes and carrots are done through.
It's good. You don't taste the Guinness nearly as much as you do in the Guinness brownies, but it's a sort of lingering flavor afterwards.
