oy update

I'm stressing out over Thanksgiving, mostly over roasting the turkey with a toddler underfoot. Originally, this was to be the only Thanksgiving celebration, so I bought a bird and determined to give it a go. THEN, we get a call from relatives saying that one of the cousins had to work on Thursday, so the big todo is on Saturday this year, so could we come?

And we can, but I still have a bird to bake tomorrow. So, after the cooking, there's going to be packing and prep for the Friday drive after work.

Also, work is getting busy as the year end crush picks up momentum. I feel like I don't get much of a chance to sit and breathe, hence the lack of posts. I don't have time to write right now.

So, thanks to those who've commented when I've surfaced. They were appreciated. I read more than I post, since I can do that on the smart phone.

Have courage. Roasting a turkey isn't harder than roasting a chicken, it just takes longer because a turkey is larger. My one suggestion is to roast it breast-down for all but the last hour, then turn it so the breast browns. The fat from the back will melt downward into the breast, making it much, much juicier.

Outside the holiday season, turkeys tend to be cheap so we buy one every month or so. We cook it on a weekend and have the meat to munch on for a while. We never get tired of it.
